Mushroom Chicharon Recipe

Mushroom chicharon is a vegetarian take on the traditional Filipino pork rind snack. Here is a recipe for making mushroom chicharon:

Ingredients:

  • 1 pound oyster mushrooms
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Clean the oyster mushrooms by wiping them with a damp paper towel or cloth. Cut off the woody stems and separate the mushrooms into small pieces.
  2. In a mixing bowl, combine the flour, cornstarch, garlic powder, onion powder, salt, and pepper.
  3. Add the mushroom pieces to the bowl and toss them in the flour mixture until they are fully coated.
  4. Heat the oil in a deep-fryer or a large pot over medium-high heat.
  5. When the oil is hot, add the coated mushroom pieces to the oil in batches, making sure not to overcrowd the pot.
  6. Fry the mushroom pieces for 2-3 minutes, or until they are golden brown and crispy.
  7. Remove the mushroom chicharon from the oil with a slotted spoon and place them on a paper towel-lined plate to drain off any excess oil.
  8. Serve the mushroom chicharon with your favorite dipping sauce.
