Chinese-style crispy eggplant is a delicious vegetarian dish that is easy to make. Here is a recipe for making crispy Chinese eggplant:

Ingredients:

  • 2 large eggplants
  • 1/2 cup cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon red pepper flakes
  • 2 green onions, sliced

Instructions:

  1. Preheat your oven to 425°F (218°C).
  2. Cut the eggplants into bite-sized pieces and place them in a large mixing bowl.
  3. In a separate bowl, combine the cornstarch, salt, and pepper.
  4. Sprinkle the cornstarch mixture over the eggplant pieces and toss them until they are fully coated.
  5. Line a baking sheet with parchment paper and spread the eggplant pieces in a single layer on the sheet.
  6. Drizzle the vegetable oil over the eggplant pieces and bake them in the preheated oven for 15-20 minutes, or until they are crispy and golden brown.
  7. While the eggplant is baking, prepare the sauce. In a small saucepan, heat the sesame oil over medium-high heat.
  8. Add the minced garlic to the pan and cook for 1-2 minutes, or until it is fragrant.
  9. Add the soy sauce, rice vinegar, honey, and red pepper flakes to the pan and stir to combine.
  10. Bring the sauce to a simmer and cook for 2-3 minutes, or until it has thickened slightly.
  11. When the eggplant is done baking, transfer it to a serving dish and pour the sauce over the top.
  12. Sprinkle sliced green onions over the top of the eggplant and serve hot.
