Ingredients:

  • 4 medium potatoes, peeled and grated
  • 2 tablespoons all-purpose flour
  • 1 egg, beaten
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooking spray
  • Toppings of your choice (such as shredded cheese, cooked bacon or sausage, diced vegetables, etc.)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the grated potatoes, flour, beaten egg, garlic powder, salt, and pepper. Mix well to combine.
  3. Spray a muffin tin with cooking spray.
  4. Scoop the potato mixture into the muffin tin, pressing it into the cups to form small nests.
