DIY Cruffin
A cruffin is a pastry that is a cross between a croissant and a muffin. Here is a recipe for making your own cruffins:
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons active dry yeast
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup warm milk
- 1/4 cup unsalted butter, softened
- 1 egg
- 1/2 cup unsalted butter, chilled
- 1/4 cup granulated sugar
- 1 tablespoon ground cinnamon
- 1/4 cup confectioners' sugar
- 1/4 teaspoon vanilla extract
- 1-2 tablespoons milk
Instructions:
- In a large bowl, whisk together the flour, yeast, sugar, and salt.
- Add the warm milk, softened butter, and egg to the bowl and mix until a dough forms.
- Turn the dough out onto a floured surface and knead for about 5 minutes, until the dough is smooth and elastic.
- Place the dough back in the bowl, cover with plastic wrap, and let it rise in a warm place for about an hour, until it has doubled in size.
- On a lightly floured surface, roll out the chilled butter into a rectangle.
- Roll the dough out into a large rectangle and place the butter rectangle on top, leaving a small border of dough around the edges.
- Fold the dough over the butter, sealing it on all sides.
- Roll out the dough again into a large rectangle and fold it in thirds like a letter.
- Turn the dough 90 degrees and repeat the rolling and folding process two more times, for a total of three times.
- Roll the dough out into a rectangle again, about 1/4 inch thick.
- Cut the dough into strips about 2 inches wide.
- Grease a muffin tin and wrap each strip of dough around the inside of a muffin cup, creating a spiral shape.
- Mix together the granulated sugar and cinnamon and sprinkle it over the top of each cruffin.
- Let the cruffins rise for about 30 minutes.
- Preheat the oven to 375°F (190°C) and bake the cruffins for 15-20 minutes, until they are golden brown and puffy.
- Let the cruffins cool in the pan for a few minutes before removing them and letting them cool completely on a wire rack.
- In a small bowl, mix together the confectioners' sugar, vanilla extract, and milk to make a glaze. Drizzle the glaze over the cruffins before serving.
