DIY Cruffin

A cruffin is a pastry that is a cross between a croissant and a muffin. Here is a recipe for making your own cruffins:

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup warm milk
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1/2 cup unsalted butter, chilled
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup confectioners' sugar
  • 1/4 teaspoon vanilla extract
  • 1-2 tablespoons milk

Instructions:

  1. In a large bowl, whisk together the flour, yeast, sugar, and salt.
  2. Add the warm milk, softened butter, and egg to the bowl and mix until a dough forms.
  3. Turn the dough out onto a floured surface and knead for about 5 minutes, until the dough is smooth and elastic.
  4. Place the dough back in the bowl, cover with plastic wrap, and let it rise in a warm place for about an hour, until it has doubled in size.
  5. On a lightly floured surface, roll out the chilled butter into a rectangle.
  6. Roll the dough out into a large rectangle and place the butter rectangle on top, leaving a small border of dough around the edges.
  7. Fold the dough over the butter, sealing it on all sides.
  8. Roll out the dough again into a large rectangle and fold it in thirds like a letter.
  9. Turn the dough 90 degrees and repeat the rolling and folding process two more times, for a total of three times.
  10. Roll the dough out into a rectangle again, about 1/4 inch thick.
  11. Cut the dough into strips about 2 inches wide.
  12. Grease a muffin tin and wrap each strip of dough around the inside of a muffin cup, creating a spiral shape.
  13. Mix together the granulated sugar and cinnamon and sprinkle it over the top of each cruffin.
  14. Let the cruffins rise for about 30 minutes.
  15. Preheat the oven to 375°F (190°C) and bake the cruffins for 15-20 minutes, until they are golden brown and puffy.
  16. Let the cruffins cool in the pan for a few minutes before removing them and letting them cool completely on a wire rack.
  17. In a small bowl, mix together the confectioners' sugar, vanilla extract, and milk to make a glaze. Drizzle the glaze over the cruffins before serving.
