Ingredients:
- 1/4 cup vegetable oil
- 1/4 cup all-purpose flour
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 pound chicken sausage, sliced
- 1 pound shrimp, peeled and deveined
- 1/2 pound scallops
- 4 cups chicken broth
- 1 can (14 ounces) diced tomatoes
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to your desired level of spiciness)
- Salt and black pepper, to taste
- Cooked white rice, for serving
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the flour and stir constantly to make a roux. Cook the roux, stirring frequently, until it turns a dark brown color, similar to the color of chocolate, which should take about 10-15 minutes. Be careful not to burn the roux.
- Add the diced onion, bell pepper, celery, and minced garlic to the pot. Cook, stirring occasionally, until the vegetables become tender, about 5-7 minutes.
- Add the sliced chicken sausage to the pot and cook for an additional 5 minutes, allowing the sausage to brown slightly.
- Stir in the diced tomatoes, chicken broth, bay leaves, dried thyme, smoked paprika, cayenne pepper, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 15-20 minutes to allow the flavors to meld together.
- Add the shrimp and scallops to the pot and cook for another 5 minutes, or until the seafood is cooked through and opaque.
- Taste the gumbo and adjust the seasoning if needed by adding more salt, black pepper, or cayenne pepper according to your preference.
- Remove the bay leaves from the pot before serving.
