Chicken Tinga Recipe
Chicken Tinga is a delicious and flavorful Mexican dish made with shredded chicken in a smoky and tangy tomato sauce. Here's a recipe to guide you in making Chicken Tinga:
Ingredients:
- 1.5 lbs (700g) boneless, skinless chicken breasts or thighs
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 can (14 oz/400g) diced tomatoes
- 2-3 chipotle peppers in adobo sauce, chopped
- 1 tablespoon adobo sauce (from the chipotle peppers can)
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1 tablespoon vegetable oil
- Salt and pepper, to taste
- Corn tortillas, for serving
- Optional toppings: sliced avocado, chopped cilantro, crumbled queso fresco, lime wedges
Instructions:
- In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the sliced onion and minced garlic and sauté until they become soft and translucent.
- Add the diced tomatoes, chipotle peppers, adobo sauce, dried oregano, ground cumin, smoked paprika, salt, and pepper to the pot. Stir well to combine.
- Place the chicken breasts or thighs into the pot, making sure they are submerged in the sauce. If needed, add a little water or chicken broth to cover the chicken.
- Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let the chicken cook for about 20-25 minutes, or until cooked through and tender.
- Once the chicken is cooked, remove it from the pot and shred it using two forks.
- While the chicken is being shredded, continue cooking the sauce over medium heat for about 10-15 minutes to thicken it slightly.
- Return the shredded chicken to the pot with the sauce. Mix well to coat the chicken with the sauce. Cook for an additional 5 minutes to allow the flavors to meld together.
- Taste and adjust the seasonings as needed, adding more salt, pepper, or adobo sauce if desired.
- Serve the Chicken Tinga on warm corn tortillas. You can garnish it with sliced avocado, chopped cilantro, crumbled queso fresco, and a squeeze of lime juice, if desired.
Chicken Tinga is traditionally served as a filling for tacos, tostadas, or tortas, but it can also be enjoyed on its own or alongside rice and beans. It's a versatile and flavorful dish that is sure to be a hit at any meal.
