Ingredients:

  • 3 cups all-purpose flour
  • 1 tablespoon instant yeast
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1/4 cup vegetable oil
  • 1 cup warm water
  • Filling of your choice (e.g. sliced deli meats, cheese, lettuce, tomato, mayonnaise, mustard)

Instructions:

  1. In a large bowl, whisk together the flour, yeast, salt, and sugar.
  2. Add the vegetable oil and warm water to the dry ingredients, mixing until a soft dough forms.
  3. Knead the dough on a lightly floured surface for 5-10 minutes, or until it's smooth and elastic.
  4. Place the dough in a greased bowl and cover it with a clean towel. Let it rise in a warm place for 1-2 hours, or until it doubles in size.
  5. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  6. Punch down the dough and divide it into 8-10 equal portions. Roll each portion into a ball and flatten it into a circle about 1/4 inch (0.6 cm) thick.
  7. Place a spoonful of your desired filling in the center of each circle, leaving a border around the edge.
  8. Fold the edges of the circle up and over the filling, pinching them together to seal.
  9. Place the filled pockets on the prepared baking sheet and let them rise for 15-20 minutes.

  11. Let the pockets cool on a wire rack before serving.
