Sandwich bread pockets are a fun and versatile way to enjoy your favorite sandwich fillings. Here's a recipe to make them at home:
Ingredients:
- 3 cups all-purpose flour
- 1 tablespoon instant yeast
- 1 teaspoon salt
- 2 tablespoons sugar
- 1/4 cup vegetable oil
- 1 cup warm water
- Filling of your choice (e.g. sliced deli meats, cheese, lettuce, tomato, mayonnaise, mustard)
Instructions:
- In a large bowl, whisk together the flour, yeast, salt, and sugar.
- Add the vegetable oil and warm water to the dry ingredients, mixing until a soft dough forms.
- Knead the dough on a lightly floured surface for 5-10 minutes, or until it's smooth and elastic.
- Place the dough in a greased bowl and cover it with a clean towel. Let it rise in a warm place for 1-2 hours, or until it doubles in size.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Punch down the dough and divide it into 8-10 equal portions. Roll each portion into a ball and flatten it into a circle about 1/4 inch (0.6 cm) thick.
- Place a spoonful of your desired filling in the center of each circle, leaving a border around the edge.
- Fold the edges of the circle up and over the filling, pinching them together to seal.
- Place the filled pockets on the prepared baking sheet and let them rise for 15-20 minutes.
- Bake the pockets for 20-25 minutes, or until they're golden brown.
- Let the pockets cool on a wire rack before serving.
