Braided brioche: yummy and fluffy

Braided brioche is a sweet, rich bread that's perfect for breakfast or brunch. Here's a recipe to make it at home:


  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 4 large eggs, lightly beaten
  • 1/2 cup unsalted butter, softened
  • 1/2 cup warm milk
  • 2 1/4 teaspoons active dry yeast
  • 1 egg yolk
  • 1 tablespoon milk
  • Coarse sugar, for sprinkling (optional)


  1. In a large bowl, whisk together the flour, sugar, and salt.
  2. In a separate bowl, combine the beaten eggs and softened butter.
  3. Warm the milk in the microwave or on the stovetop until it's warm to the touch, but not hot. Stir in the yeast until it's fully dissolved.
  4. Add the egg and butter mixture to the dry ingredients and mix until a dough forms.
  5. Gradually add the yeast and milk mixture to the dough, mixing until the dough is smooth and elastic.
  6. Cover the dough with plastic wrap and let it rest for 1 hour, or until it doubles in size.
  7. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  8. Divide the dough into three equal portions. Roll each portion into a long, thin rope about 1 inch (2.5 cm) in diameter.
  9. Braid the ropes together and form the braided loaf into a circle. Pinch the ends of the ropes together to seal.
  10. In a small bowl, whisk together the egg yolk and milk. Brush the egg wash over the surface of the braided brioche. Sprinkle coarse sugar over the top, if using.
  11. Bake the brioche for 25-30 minutes, or until it's golden brown and sounds hollow when tapped.
  12. Let the brioche cool on a wire rack before slicing and serving.
