Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 1 cup raspberry jam
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar
Instructions:
- Preheat the oven to 350°F (180°C) and grease a 9-inch (23 cm) cake pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the egg and vanilla extract to the butter-sugar mixture and beat until well combined.
- Gradually add the flour mixture to the butter-sugar mixture, alternating with the milk, and mix until the batter is smooth.
- Spread the batter evenly in the prepared cake pan and spoon the raspberry jam over the top.
- In a separate large bowl, beat the egg whites until frothy, then add the cream of tartar and continue to beat until soft peaks form.
- Gradually add the sugar to the egg whites, 1 tablespoon at a time, while continuing to beat until stiff peaks form.

- Bake for 30-35 minutes, or until the meringue is golden brown and the cake is cooked through.
