Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1 cup raspberry jam
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar

Instructions:

  1. Preheat the oven to 350°F (180°C) and grease a 9-inch (23 cm) cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter-sugar mixture and beat until well combined.
  5. Gradually add the flour mixture to the butter-sugar mixture, alternating with the milk, and mix until the batter is smooth.
  6. Spread the batter evenly in the prepared cake pan and spoon the raspberry jam over the top.
  7. In a separate large bowl, beat the egg whites until frothy, then add the cream of tartar and continue to beat until soft peaks form.
  8. Gradually add the sugar to the egg whites, 1 tablespoon at a time, while continuing to beat until stiff peaks form.
  9. Spoon the meringue mixture over the jam and spread it evenly to cover the cake.
  10. Bake for 30-35 minutes, or until the meringue is golden brown and the cake is cooked through.
