Spring Roll Dosa is a fusion dish that combines the elements of a traditional South Indian dosa with the flavors of a crispy and savory spring roll. It's a delightful twist on the classic dosa, where a thin and crispy rice and lentil crepe is filled with a flavorful vegetable filling, similar to what you would find in a spring roll. Here's a recipe to make Spring Roll Dosa:

Ingredients:

For the Dosa Batter:

  • 1 cup dosa rice (or regular rice)
  • 1/4 cup urad dal (split black gram)
  • 1/4 teaspoon fenugreek seeds
  • Salt to taste
  • Water for soaking and grinding

For the Filling:

  • 1 cup finely shredded cabbage
  • 1/2 cup grated carrots
  • 1/2 cup thinly sliced bell peppers (capsicum)
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped spring onions
  • 1/4 cup finely chopped green beans
  • 2-3 green chilies, finely chopped
  • 1 tablespoon oil
  • 1 teaspoon ginger-garlic paste
  • 1 tablespoon soy sauce
  • 1 tablespoon tomato ketchup
  • 1 teaspoon vinegar
  • Salt and pepper to taste

Instructions:

For the Dosa Batter:

  1. Rinse the dosa rice and urad dal separately. Soak them along with fenugreek seeds in enough water for at least 4 hours.
  2. Drain the water and grind the soaked rice and dal separately to a smooth batter consistency. Add water as needed while grinding.
  3. Mix the ground rice and dal batter together in a large bowl. Add salt and mix well. Let the batter ferment overnight or for 8-10 hours, allowing it to rise and develop a tangy flavor.

For the Filling:

  1. Heat oil in a pan or skillet over medium heat. Add ginger-garlic paste and green chilies. Sauté for a minute until fragrant.
  2. Add chopped onions and cook until they turn translucent.
  3. Add grated carrots, shredded cabbage, bell peppers, green beans, and spring onions. Stir-fry the vegetables for a couple of minutes until they are slightly cooked but still retain their crunch.
  4. Add soy sauce, tomato ketchup, vinegar, salt, and pepper to the pan. Mix well to coat the vegetables with the sauces and seasonings.
  5. Cook for another minute or two until the flavors are well combined. Remove from heat and set aside.

For the Spring Roll Dosa:

  1. Heat a dosa tawa or non-stick skillet over medium heat. Grease it lightly with oil.
  2. Pour a ladleful of dosa batter onto the center of the tawa and spread it in a circular motion to form a thin dosa.
  3. Drizzle a little oil around the edges of the dosa and cook until the bottom turns golden brown and crispy.
  4. Flip the dosa and cook the other side for a minute or two.
  5. Spread a generous spoonful of the prepared vegetable filling on one half of the dosa.
  6. Fold the dosa over the filling, covering it completely to form a semi-circle or roll.
  7. Press the dosa gently to seal the edges and cook for another minute until the filling is heated through.
  8. Remove the Spring Roll Dosa from the tawa and repeat the process to make more dosas.
