Miso crunch salad is a delicious and healthy salad that combines the umami flavor of miso with crunchy vegetables and a variety of textures. Here's a recipe that you can try:
Ingredients:
- 1 head of romaine lettuce, chopped
- 1 small head of purple cabbage, thinly sliced
- 1 large carrot, grated
- 1/2 cup edamame beans, shelled
- 1/2 cup sliced almonds
- 1/4 cup chopped cilantro
For the dressing:
- 3 tablespoons white miso paste
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1 tablespoon toasted sesame oil
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1/4 cup water
Instructions:
- In a large bowl, combine the chopped romaine lettuce, thinly sliced purple cabbage, grated carrot, and shelled edamame beans.
- In a small saucepan, toast the sliced almonds over medium heat until golden brown, stirring frequently. Remove from heat and set aside.
- In a blender or food processor, combine the white miso paste, rice vinegar, honey, toasted sesame oil, grated ginger, minced garlic, and water. Blend until smooth.
- Pour the dressing over the salad and toss to coat evenly.
- Top the salad with the toasted sliced almonds and chopped cilantro.
