Amazing Blackberry Hand Pies

These amazing blackberry hand pies are bursting with flavor and covered in a crisp butter crust flecked with rosemary. Blackberry hand pies are a sweet and delicious dessert that are perfect for summer. Here's a recipe that you can try:

Ingredients:

For the crust:

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup unsalted butter, chilled and cut into small pieces
  • 1/2 cup ice water

For the filling:

  • 2 cups fresh blackberries
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

For assembling:

  • 1 egg, beaten
  • 1 tablespoon water
  • Coarse sugar, for sprinkling

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, and salt. Add the chilled butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  2. Gradually add the ice water and mix until the dough comes together. Divide the dough in half and shape each half into a disk. Wrap each disk in plastic wrap and refrigerate for at least 30 minutes.
  3. In a small bowl, mix together the blackberries, sugar, lemon juice, and cornstarch.
  4. Preheat your oven to 375°F (190°C).
  5. On a floured surface, roll out each dough disk to a thickness of 1/8 inch. Cut the dough into 4-inch rounds.
  6. Place a spoonful of the blackberry filling in the center of each round. Fold the dough over the filling to create a half-circle. Use a fork to crimp the edges to seal.
  7. In a small bowl, whisk together the egg and water. Brush the egg wash over the tops of the pies. Sprinkle with coarse sugar.
  8. Bake the pies for 25 to 30 minutes, or until golden brown. Allow the pies to cool for a few minutes before serving.
  9. Serve and enjoy your delicious blackberry hand pies!
