No Meat Veggie Keema Paratha

Veggie keema paratha is a vegetarian version of the popular Indian stuffed bread, where instead of meat, a flavorful and spiced vegetable mixture is used as the filling. Here's a recipe for no meat veggie keema paratha:

Ingredients:

For the dough:

  • 2 cups whole wheat flour
  • Water (as needed)
  • Salt to taste

For the vegetable keema filling:

  • 1 cup grated vegetables (carrots, cauliflower, cabbage, etc.)
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 2 green chilies, finely chopped (adjust to your spice preference)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to your spice preference)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for cooking

Instructions:

For the dough:

  1. In a mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead to form a smooth and pliable dough. Set it aside to rest for about 15-20 minutes.

For the vegetable keema filling:

  1. Heat oil in a pan over medium heat.
  2. Add the chopped onions and green chilies to the pan. Sauté until the onions turn translucent.
  3. Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
  4. Add the grated vegetables to the pan and mix well with the onions and spices.
  5. Add the chopped tomatoes and cook until they become soft and mushy.
  6. Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt to the pan. Mix well and cook for another couple of minutes to allow the flavors to meld together. Remove from heat.

For making the parathas:

  1. Divide the dough into small equal-sized portions and shape them into balls.
  2. Take one dough ball and roll it into a small circle on a lightly floured surface.
  3. Place a spoonful of the vegetable keema filling in the center of the rolled dough circle.
  4. Bring the edges of the dough together and seal the filling inside by pinching the edges together.
  5. Gently flatten the stuffed dough ball and roll it out into a larger circle, taking care not to let the filling come out.
  6. Heat a tawa or griddle over medium heat.
  7. Place the rolled paratha on the heated tawa and cook until small bubbles start to appear on the surface.
  8. Flip the paratha and apply a little oil or ghee on the cooked side.
  9. Cook the other side until golden brown spots appear, pressing gently with a spatula.
  10. Remove the veggie keema paratha from the tawa and repeat the process with the remaining dough and filling.

Serve the no meat veggie keema paratha hot with yogurt, pickle, or any chutney of your choice. It's a delicious and satisfying meal that can be enjoyed for breakfast, lunch, or dinner.
