Ingredients:
- 250 grams paneer (cottage cheese), cut into cubes
- 2 bunches of spinach (palak), washed and finely chopped
- 4-5 garlic cloves, finely chopped
- 1-inch ginger, grated
- 2 green chilies, finely chopped
- 1 large onion, finely chopped
- 2 medium tomatoes, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust according to your preference)
- 1/2 cup fresh cream or cashew cream
- 2 tablespoons oil or ghee (clarified butter)
- Salt to taste
Instructions:
- Heat oil or ghee in a pan or kadai over medium heat. Add cumin seeds and let them splutter.
- Add finely chopped garlic and sauté until it turns golden brown and releases its aroma.
- Add finely chopped onions and sauté until they become translucent.
- Add grated ginger and finely chopped green chilies. Sauté for a minute.
- Add finely chopped tomatoes and cook until they become soft and mushy.
- Add turmeric powder, red chili powder, and garam masala. Mix well and cook for a couple of minutes.
- Add the finely chopped spinach (palak) to the pan. Mix well with the masala and cook until the spinach wilts and reduces in volume.
- Remove the pan from heat and let the mixture cool down.
- Once the mixture has cooled, transfer it to a blender or food processor. Blend it to a smooth puree. You can add a little water if needed.
- Return the pureed spinach mixture to the pan and place it over low heat.
- Add salt to taste and mix well. Let it simmer for 5-6 minutes.
- Add the paneer cubes to the spinach mixture and stir gently to coat the paneer with the sauce. Cook for another 2-3 minutes.
- Finally, add fresh cream or cashew cream to the pan and mix well. Cook for a minute to let the flavors combine.
- Remove from heat and garnish with a drizzle of fresh cream.
