Lasooni Palak Paneer is a flavorful and creamy Indian dish made with spinach (palak) and cottage cheese (paneer). The addition of garlic (lasooni) enhances the taste and gives it a unique twist. This recipe will help you recreate the delicious Dhaba-style Lasooni Palak Paneer at home. Here's how to make it:

Ingredients:

  • 250 grams paneer (cottage cheese), cut into cubes
  • 2 bunches of spinach (palak), washed and finely chopped
  • 4-5 garlic cloves, finely chopped
  • 1-inch ginger, grated
  • 2 green chilies, finely chopped
  • 1 large onion, finely chopped
  • 2 medium tomatoes, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust according to your preference)
  • 1/2 cup fresh cream or cashew cream
  • 2 tablespoons oil or ghee (clarified butter)
  • Salt to taste

Instructions:

  1. Heat oil or ghee in a pan or kadai over medium heat. Add cumin seeds and let them splutter.
  2. Add finely chopped garlic and sauté until it turns golden brown and releases its aroma.
  3. Add finely chopped onions and sauté until they become translucent.
  4. Add grated ginger and finely chopped green chilies. Sauté for a minute.
  5. Add finely chopped tomatoes and cook until they become soft and mushy.
  6. Add turmeric powder, red chili powder, and garam masala. Mix well and cook for a couple of minutes.
  7. Add the finely chopped spinach (palak) to the pan. Mix well with the masala and cook until the spinach wilts and reduces in volume.
  8. Remove the pan from heat and let the mixture cool down.
  9. Once the mixture has cooled, transfer it to a blender or food processor. Blend it to a smooth puree. You can add a little water if needed.
  10. Return the pureed spinach mixture to the pan and place it over low heat.
  11. Add salt to taste and mix well. Let it simmer for 5-6 minutes.
  12. Add the paneer cubes to the spinach mixture and stir gently to coat the paneer with the sauce. Cook for another 2-3 minutes.
  13. Finally, add fresh cream or cashew cream to the pan and mix well. Cook for a minute to let the flavors combine.
  14. Remove from heat and garnish with a drizzle of fresh cream.
