Onion Pulao & Potato Dry Curry

Onion pulao and potato dry curry is a flavorful and delicious combo of two classic Indian dishes that can be easily made at home. Onion pulao is a fragrant rice dish made with aromatic spices and caramelized onions, while potato dry curry is a spicy and savory side dish that pairs perfectly with the pulao.
Here is a recipe for onion pulao and potato dry curry:
Ingredients:
For the onion pulao:
- 1 cup basmati rice
- 2 cups water
- 1 large onion, thinly sliced
- 2 tbsp ghee or oil
- 1 cinnamon stick
- 2-3 green cardamom pods
- 2-3 cloves
- Salt to taste
For the potato dry curry:
- 3 medium-sized potatoes, peeled and cubed
- 1 large onion, finely chopped
- 1 tsp ginger-garlic paste
- 2 green chilies, slit lengthwise
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions:
For the onion pulao:
- Wash and soak the basmati rice in water for 30 minutes. Drain and keep aside.
- Heat ghee or oil in a pan and add cinnamon, cardamom, and cloves. Fry for a few seconds.
- Add the sliced onions and sauté till they turn golden brown.
- Add the drained rice to the pan and sauté for a few minutes.
- Add 2 cups of water and salt to taste. Mix well.
- Cover the pan with a lid and cook on low heat for 15-20 minutes, or until the rice is cooked and the water has been absorbed. Fluff the rice with a fork and keep aside.
For the potato dry curry:
- Heat oil in a pan and add cumin and mustard seeds. Let them crackle.
- Add the chopped onions and sauté till they turn golden brown.
- Add the ginger-garlic paste and slit green chilies. Fry for a minute.
- Add the cubed potatoes and mix well.
- Add turmeric powder, coriander powder, red chili powder, and salt to taste. Mix well.
- Cover the pan with a lid and cook on low heat for 15-20 minutes, or until the potatoes are tender and cooked.
- Garnish with fresh coriander leaves.
Serve the onion pulao and potato dry curry hot with some raita or pickle on the side. This dish is perfect for a simple and delicious weeknight dinner or for entertaining guests.
