Onion Pulao & Potato Dry Curry

Onion pulao and potato dry curry is a flavorful and delicious combo of two classic Indian dishes that can be easily made at home. Onion pulao is a fragrant rice dish made with aromatic spices and caramelized onions, while potato dry curry is a spicy and savory side dish that pairs perfectly with the pulao.

Here is a recipe for onion pulao and potato dry curry:

Ingredients:

For the onion pulao:

  • 1 cup basmati rice
  • 2 cups water
  • 1 large onion, thinly sliced
  • 2 tbsp ghee or oil
  • 1 cinnamon stick
  • 2-3 green cardamom pods
  • 2-3 cloves
  • Salt to taste

For the potato dry curry:

  • 3 medium-sized potatoes, peeled and cubed
  • 1 large onion, finely chopped
  • 1 tsp ginger-garlic paste
  • 2 green chilies, slit lengthwise
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions:

For the onion pulao:

  1. Wash and soak the basmati rice in water for 30 minutes. Drain and keep aside.
  2. Heat ghee or oil in a pan and add cinnamon, cardamom, and cloves. Fry for a few seconds.
  3. Add the sliced onions and sauté till they turn golden brown.
  4. Add the drained rice to the pan and sauté for a few minutes.
  5. Add 2 cups of water and salt to taste. Mix well.
  6. Cover the pan with a lid and cook on low heat for 15-20 minutes, or until the rice is cooked and the water has been absorbed. Fluff the rice with a fork and keep aside.

For the potato dry curry:

  1. Heat oil in a pan and add cumin and mustard seeds. Let them crackle.
  2. Add the chopped onions and sauté till they turn golden brown.
  3. Add the ginger-garlic paste and slit green chilies. Fry for a minute.
  4. Add the cubed potatoes and mix well.
  5. Add turmeric powder, coriander powder, red chili powder, and salt to taste. Mix well.
  6. Cover the pan with a lid and cook on low heat for 15-20 minutes, or until the potatoes are tender and cooked.
  7. Garnish with fresh coriander leaves.

Serve the onion pulao and potato dry curry hot with some raita or pickle on the side. This dish is perfect for a simple and delicious weeknight dinner or for entertaining guests.
