Ingredients:
- 1 cup plain Greek yogurt
- 1/2 cup honey
- 1/2 cup coconut oil, melted
- 1 tsp vanilla extract
- 2 eggs
- 1 and 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup powdered sugar (optional)
Instructions:
- Preheat your oven to 350°F. Grease a 9-inch cake pan with cooking spray.
- In a large mixing bowl, whisk together the Greek yogurt, honey, melted coconut oil, vanilla extract, and eggs until smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, whisking until a smooth batter forms.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool in the pan for 10-15 minutes before removing it from the pan and letting it cool completely on a wire rack.
- Once the cake is cool, dust with powdered sugar (optional) and serve.
