A Lemon Tart

Here's a recipe for a classic and delicious Lemon Tart:

Ingredients:

For the crust:

  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1-2 tbsp ice water

For the filling:

  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 1 cup water
  • 4 egg yolks
  • 1/2 cup fresh lemon juice
  • 2 tbsp unsalted butter, cubed
  • 1 tbsp lemon zest
  • Whipped cream, for serving (optional)

Instructions:

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, combine the flour, sugar, and cubed butter. Use your fingertips to rub the butter into the flour until the mixture resembles coarse sand.
  3. Add the egg yolk and 1 tablespoon of ice water to the mixture, and mix until the dough comes together. If needed, add an additional tablespoon of ice water.
  4. Roll the dough out into a 12-inch circle and carefully transfer it to a 9-inch tart pan with a removable bottom. Press the dough into the bottom and up the sides of the pan, trimming off any excess dough.
  5. Prick the bottom of the crust with a fork, and bake for 15-20 minutes, or until lightly golden. Let cool completely.
  6. In a medium saucepan, whisk together the sugar, cornstarch, salt, and water until smooth. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil.
  7. In a separate mixing bowl, whisk together the egg yolks and lemon juice. Slowly pour the hot sugar mixture into the egg yolk mixture, whisking constantly.
  8. Return the mixture to the saucepan and cook over low heat, stirring constantly, for 5-7 minutes, or until the mixture thickens and coats the back of a spoon.
  9. Remove the saucepan from the heat and stir in the cubed butter and lemon zest until the butter is melted and the mixture is smooth.
  10. Pour the lemon filling into the cooled tart crust and smooth the top with a spatula.
  11. Chill the tart in the refrigerator for at least 1-2 hours, or until set.
  12. Serve the lemon tart with whipped cream, if desired.
