A Lemon Tart

Here's a recipe for a classic and delicious Lemon Tart:
Ingredients:
For the crust:
- 1 and 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1 egg yolk
- 1-2 tbsp ice water
For the filling:
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 tsp salt
- 1 cup water
- 4 egg yolks
- 1/2 cup fresh lemon juice
- 2 tbsp unsalted butter, cubed
- 1 tbsp lemon zest
- Whipped cream, for serving (optional)
Instructions:
- Preheat the oven to 375°F.
- In a large mixing bowl, combine the flour, sugar, and cubed butter. Use your fingertips to rub the butter into the flour until the mixture resembles coarse sand.
- Add the egg yolk and 1 tablespoon of ice water to the mixture, and mix until the dough comes together. If needed, add an additional tablespoon of ice water.
- Roll the dough out into a 12-inch circle and carefully transfer it to a 9-inch tart pan with a removable bottom. Press the dough into the bottom and up the sides of the pan, trimming off any excess dough.
- Prick the bottom of the crust with a fork, and bake for 15-20 minutes, or until lightly golden. Let cool completely.
- In a medium saucepan, whisk together the sugar, cornstarch, salt, and water until smooth. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil.
- In a separate mixing bowl, whisk together the egg yolks and lemon juice. Slowly pour the hot sugar mixture into the egg yolk mixture, whisking constantly.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, for 5-7 minutes, or until the mixture thickens and coats the back of a spoon.
- Remove the saucepan from the heat and stir in the cubed butter and lemon zest until the butter is melted and the mixture is smooth.
- Pour the lemon filling into the cooled tart crust and smooth the top with a spatula.
- Chill the tart in the refrigerator for at least 1-2 hours, or until set.
- Serve the lemon tart with whipped cream, if desired.
