Mandarin Roulade Recipe
Mandarin Roulade is a light and delicious dessert that's perfect for any occasion. Here's a simple recipe:
Ingredients:
- 6 large eggs, separated
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 cup mandarin orange segments, drained
- 2 cups whipped cream
Instructions:
- Preheat the oven to 350°F. Line a 15x10-inch jelly roll pan with parchment paper.
- In a large mixing bowl, beat the egg yolks and sugar until thick and pale.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the egg yolk mixture, mixing until just combined.
- Stir in the vanilla extract and mandarin orange segments.
- In another large mixing bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the cake batter until just combined.
- Pour the cake batter into the prepared jelly roll pan and spread it out evenly.
- Bake for 12-15 minutes, or until the cake is lightly golden and springs back when lightly touched.
- Remove the cake from the oven and let it cool for a few minutes.
- While the cake is still warm, place a clean kitchen towel on top of it and flip the cake over onto the towel.
- Carefully remove the parchment paper from the cake.
- Starting at the short end, roll the cake and towel up together into a tight spiral.
- Let the cake cool completely in the towel.
- Once the cake has cooled, carefully unroll it and remove the towel.
- Spread the whipped cream over the top of the cake, leaving a 1-inch border around the edges.
- Starting at the short end, roll the cake up tightly.
- Garnish the Mandarin Roulade with additional mandarin orange segments, if desired.
