Mandarin Roulade Recipe

Mandarin Roulade is a light and delicious dessert that's perfect for any occasion. Here's a simple recipe:


  • 6 large eggs, separated
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 cup mandarin orange segments, drained
  • 2 cups whipped cream


  1. Preheat the oven to 350°F. Line a 15x10-inch jelly roll pan with parchment paper.
  2. In a large mixing bowl, beat the egg yolks and sugar until thick and pale.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the egg yolk mixture, mixing until just combined.
  5. Stir in the vanilla extract and mandarin orange segments.
  6. In another large mixing bowl, beat the egg whites until stiff peaks form.
  7. Gently fold the egg whites into the cake batter until just combined.
  8. Pour the cake batter into the prepared jelly roll pan and spread it out evenly.
  9. Bake for 12-15 minutes, or until the cake is lightly golden and springs back when lightly touched.
  10. Remove the cake from the oven and let it cool for a few minutes.
  11. While the cake is still warm, place a clean kitchen towel on top of it and flip the cake over onto the towel.
  12. Carefully remove the parchment paper from the cake.
  13. Starting at the short end, roll the cake and towel up together into a tight spiral.
  14. Let the cake cool completely in the towel.
  15. Once the cake has cooled, carefully unroll it and remove the towel.
  16. Spread the whipped cream over the top of the cake, leaving a 1-inch border around the edges.
  17. Starting at the short end, roll the cake up tightly.
  18. Garnish the Mandarin Roulade with additional mandarin orange segments, if desired.
