Chicken Bhujing, also known as Chicken Bhujia, is a popular street food dish from Mumbai, India. It is made with succulent pieces of chicken cooked in a spicy and tangy marinade. The dish is typically prepared on a griddle or tawa, giving it a unique smoky flavor.

Ingredients:

  • 500 grams boneless chicken, cut into small pieces
  • 2 tablespoons oil
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, finely chopped
  • 1 medium onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust according to spice preference)
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 tablespoon lemon juice
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

For the Marinade:

  • 1/2 cup plain yogurt
  • 2 tablespoons besan (gram flour)
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste

Instructions:

  1. In a bowl, combine all the ingredients for the marinade - yogurt, besan, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. Mix well to form a smooth paste.
  2. Add the chicken pieces to the marinade and mix until the chicken is well coated. Allow the chicken to marinate for at least 1-2 hours in the refrigerator.
  3. Heat oil in a large skillet or tawa over medium-high heat.
  4. Add the ginger-garlic paste and green chilies to the hot oil and sauté for a minute until fragrant.
  5. Add the finely chopped onions and cook until they turn translucent.
  6. Add the finely chopped tomatoes and cook until they soften and release their juices.
  7. Now, add the marinated chicken along with the marinade to the skillet. Mix well to combine the chicken with the onion-tomato mixture.
  8. Reduce the heat to medium and cook the chicken for about 15-20 minutes, stirring occasionally, until it is cooked through and tender. If needed, add a splash of water to prevent sticking.
  9. Add turmeric powder, red chili powder, garam masala, coriander powder, lemon juice, and salt. Mix well to coat the chicken evenly with the spices. Cook for an additional 2-3 minutes to allow the flavors to meld together.
  10. Remove from heat and garnish with fresh coriander leaves.
  11. Serve the Mumbai special Chicken Bhujing hot with roti, naan, or pav. Squeeze fresh lemon juice over the dish before serving for an extra tangy kick.
