Mumbai special Chicken Bhujing
Chicken Bhujing, also known as Chicken Bhujia, is a popular street food dish from Mumbai, India. It is made with succulent pieces of chicken cooked in a spicy and tangy marinade. The dish is typically prepared on a griddle or tawa, giving it a unique smoky flavor.
Ingredients:
- 500 grams boneless chicken, cut into small pieces
- 2 tablespoons oil
- 1 tablespoon ginger-garlic paste
- 2 green chilies, finely chopped
- 1 medium onion, finely chopped
- 2 tomatoes, finely chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust according to spice preference)
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1 tablespoon lemon juice
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for serving
For the Marinade:
- 1/2 cup plain yogurt
- 2 tablespoons besan (gram flour)
- 1 teaspoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
Instructions:
- In a bowl, combine all the ingredients for the marinade - yogurt, besan, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. Mix well to form a smooth paste.
- Add the chicken pieces to the marinade and mix until the chicken is well coated. Allow the chicken to marinate for at least 1-2 hours in the refrigerator.
- Heat oil in a large skillet or tawa over medium-high heat.
- Add the ginger-garlic paste and green chilies to the hot oil and sauté for a minute until fragrant.
- Add the finely chopped onions and cook until they turn translucent.
- Add the finely chopped tomatoes and cook until they soften and release their juices.
- Now, add the marinated chicken along with the marinade to the skillet. Mix well to combine the chicken with the onion-tomato mixture.
- Reduce the heat to medium and cook the chicken for about 15-20 minutes, stirring occasionally, until it is cooked through and tender. If needed, add a splash of water to prevent sticking.
- Add turmeric powder, red chili powder, garam masala, coriander powder, lemon juice, and salt. Mix well to coat the chicken evenly with the spices. Cook for an additional 2-3 minutes to allow the flavors to meld together.
- Remove from heat and garnish with fresh coriander leaves.
- Serve the Mumbai special Chicken Bhujing hot with roti, naan, or pav. Squeeze fresh lemon juice over the dish before serving for an extra tangy kick.
