Main Dish: Greek Yogurt Chicken Skewers
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 1 cup Greek yogurt
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Skewers (if using wooden skewers, soak them in water for 30 minutes before using)
Instructions:
- In a bowl, combine the Greek yogurt, olive oil, minced garlic, lemon juice, dried oregano, paprika, salt, and pepper. Mix well to make the marinade.
- Add the chicken cubes to the marinade, making sure they are well coated. Cover the bowl and refrigerate for at least 1 hour, or overnight for best flavor.
