Coconut choco-bar ice cream is a delicious frozen treat that combines the flavors of creamy coconut and rich chocolate. Here's a recipe to make coconut choco-bar ice cream at home:
Ingredients:
For the coconut ice cream layer:
- 1 can (14 ounces) coconut milk
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
For the chocolate coating:
- 8 ounces dark chocolate, chopped
- 2 tablespoons coconut oil
For the filling:
- 1/2 cup shredded coconut (sweetened or unsweetened)
- 1/2 cup chopped nuts (such as almonds or peanuts), optional
Instructions:
- In a mixing bowl, combine the coconut milk, heavy cream, granulated sugar, and vanilla extract. Whisk until the sugar is dissolved and the mixture is well combined.
- Pour the coconut ice cream mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
- While the ice cream is churning, prepare a 9x9-inch baking dish or a similar-sized container lined with parchment paper.
- Once the ice cream has reached the desired consistency, fold in the shredded coconut and chopped nuts (if using) into the churned ice cream.
- Transfer the coconut ice cream mixture into the prepared baking dish, spreading it evenly. Cover with plastic wrap and freeze for at least 4-6 hours, or until it is firm.
