Coconut choco-bar ice cream is a delicious frozen treat that combines the flavors of creamy coconut and rich chocolate. Here's a recipe to make coconut choco-bar ice cream at home:

Ingredients:

For the coconut ice cream layer:

  • 1 can (14 ounces) coconut milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

For the chocolate coating:

  • 8 ounces dark chocolate, chopped
  • 2 tablespoons coconut oil

For the filling:

  • 1/2 cup shredded coconut (sweetened or unsweetened)
  • 1/2 cup chopped nuts (such as almonds or peanuts), optional

Instructions:

  1. In a mixing bowl, combine the coconut milk, heavy cream, granulated sugar, and vanilla extract. Whisk until the sugar is dissolved and the mixture is well combined.
  2. Pour the coconut ice cream mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
  3. While the ice cream is churning, prepare a 9x9-inch baking dish or a similar-sized container lined with parchment paper.
  4. Once the ice cream has reached the desired consistency, fold in the shredded coconut and chopped nuts (if using) into the churned ice cream.
  5. Transfer the coconut ice cream mixture into the prepared baking dish, spreading it evenly. Cover with plastic wrap and freeze for at least 4-6 hours, or until it is firm.
  6. Once the ice cream is firm, remove it from the freezer and lift it out of the dish using the parchment paper. Cut the frozen coconut ice cream into rectangular bars or desired shapes.
  7. Place the ice cream bars on a baking sheet lined with parchment paper and return them to the freezer while preparing the chocolate coating.
  8. In a microwave-safe bowl or using a double boiler, melt the dark chocolate and coconut oil together until smooth and well combined.
  9. Remove the ice cream bars from the freezer. Dip each bar into the melted chocolate, using a fork or a dipping tool to ensure they are evenly coated. Let any excess chocolate drip off.
  10. Return the chocolate-coated bars to the baking sheet and place them back in the freezer to allow the chocolate coating to set. This process will take about 10-15 minutes.
  11. Once the chocolate coating is set, your homemade coconut choco-bar ice cream is ready to be enjoyed! Serve the bars directly from the freezer or transfer them to an airtight container for longer storage.

Coconut choco-bar ice cream is a delightful combination of creamy coconut ice cream and a rich chocolate coating. It's a perfect treat to enjoy on a hot day or anytime you're craving a refreshing dessert.
