Nigerian Style Spaghetti
Nigerian style spaghetti is a flavorful and spicy twist on the classic Italian pasta dish. Here's a simple recipe:
Ingredients:
- 1 lb spaghetti
- 1 onion, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 2 tbsp tomato paste
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions:
- Cook the spaghetti according to the package instructions. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium-high heat.
- Add the diced onion and red bell pepper to the skillet and cook for 5-7 minutes, or until the vegetables are tender.
- Add the minced garlic, ground cumin, ground coriander, smoked paprika, and cayenne pepper to the skillet. Cook for 1-2 minutes, or until fragrant.
- Add the tomato paste to the skillet and stir to combine with the vegetables and spices.
- Pour the diced tomatoes and chicken broth into the skillet and stir to combine.
- Let the sauce simmer for 10-15 minutes, or until it has thickened slightly.
- Season the sauce with salt and pepper to taste.
- Add the cooked spaghetti to the skillet and toss to coat with the sauce.
- Garnish with fresh parsley or cilantro and serve hot.
