Nigerian style spaghetti is a flavorful and spicy twist on the classic Italian pasta dish. Here's a simple recipe:

Ingredients:

  • 1 lb spaghetti
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 2 tbsp tomato paste
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions:

  1. Cook the spaghetti according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium-high heat.
  3. Add the diced onion and red bell pepper to the skillet and cook for 5-7 minutes, or until the vegetables are tender.
  4. Add the minced garlic, ground cumin, ground coriander, smoked paprika, and cayenne pepper to the skillet. Cook for 1-2 minutes, or until fragrant.
  5. Add the tomato paste to the skillet and stir to combine with the vegetables and spices.
  6. Pour the diced tomatoes and chicken broth into the skillet and stir to combine.
  7. Let the sauce simmer for 10-15 minutes, or until it has thickened slightly.
  8. Season the sauce with salt and pepper to taste.
  9. Add the cooked spaghetti to the skillet and toss to coat with the sauce.
  10. Garnish with fresh parsley or cilantro and serve hot.
