Ingredients:

  • 1 lb beef sirloin, cut into small cubes
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 garlic cloves, minced
  • 1 cup long-grain white rice
  • 1 3/4 cups beef broth
  • 1/2 cup canned diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the beef cubes and cook for 5-7 minutes, or until browned on all sides.
  3. Add the onion, green bell pepper, and garlic. Cook for another 2-3 minutes, or until the onion is softened.
  4. Add the rice and stir to coat it with the beef and vegetable mixture.
  5. Add the beef broth, diced tomatoes, basil, oregano, paprika, salt, and pepper. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a tight-fitting lid.
  7. Let the rice pilaf simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
  8. Remove the skillet from the heat and let it sit, covered, for 5-10 minutes.
  9. Fluff the rice pilaf with a fork and serve hot.
