Mexican Chipotle Pork and Beans
Mexican chipotle pork and beans is a flavorful and hearty dish that's perfect for a satisfying meal. Here's a simple recipe:
Ingredients:
- 1 lb pork shoulder, cut into bite-sized pieces
- 1 can kidney beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, diced
- 2 garlic cloves, minced
- 2 tbsp chipotle peppers in adobo sauce, chopped
- 1 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Cilantro and lime wedges for garnish
Instructions:
- Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
- Add the pork and cook for 5-7 minutes, or until browned on all sides.
- Add the onion and garlic and cook for another 2-3 minutes, or until the onion is softened.
- Add the chipotle peppers, tomato paste, cumin, and smoked paprika. Stir well to combine.
- Add the diced tomatoes with their juice and the kidney beans. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-40 minutes, or until the pork is tender and the sauce has thickened.
- Season with salt and pepper to taste.
