Ingredients:

  • 1 lb pork shoulder, cut into bite-sized pieces
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp chipotle peppers in adobo sauce, chopped
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Cilantro and lime wedges for garnish

Instructions:

  1. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
  2. Add the pork and cook for 5-7 minutes, or until browned on all sides.
  3. Add the onion and garlic and cook for another 2-3 minutes, or until the onion is softened.
  4. Add the chipotle peppers, tomato paste, cumin, and smoked paprika. Stir well to combine.
  5. Add the diced tomatoes with their juice and the kidney beans. Stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-40 minutes, or until the pork is tender and the sauce has thickened.
  7. Season with salt and pepper to taste.
