Kacche Aam Ki Launji, also known as Raw Mango Chutney, is a tangy and sweet Indian condiment made with raw mangoes, spices, and jaggery (or sugar). It is a popular accompaniment in Indian cuisine and adds a burst of flavor to meals. Here's a recipe to make Kacche Aam Ki Launji:

Ingredients:

  • 2 raw mangoes, peeled and cut into small pieces
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon fenugreek seeds
  • 1/2 teaspoon nigella seeds (kalonji)
  • 1/4 teaspoon asafoetida (hing)
  • 2-3 dried red chilies, broken into pieces
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (optional, for spiciness)
  • 1/2 cup jaggery (or sugar), grated or finely chopped
  • Salt to taste
  • Water as needed

Instructions:

  1. Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
  2. Add fenugreek seeds, nigella seeds, dried red chilies, and asafoetida. Sauté for a few seconds until the spices release their aroma.
  3. Add the chopped raw mangoes to the pan and mix well. Cook for a minute or two to soften the mangoes slightly.
  4. Add turmeric powder, red chili powder (if using), and salt. Mix well to coat the mangoes with the spices.
  5. Reduce the heat to low and cover the pan. Let the mangoes cook for about 5-6 minutes, stirring occasionally.
  6. Add grated jaggery (or sugar) to the pan and mix well. Cook for another 3-4 minutes until the jaggery melts and combines with the mangoes.
  7. Add water, around 1/4 to 1/2 cup, depending on the desired consistency of the chutney. If you prefer a thicker chutney, add less water; for a thinner consistency, add more water.
  8. Simmer the chutney on low heat for 5-7 minutes, stirring occasionally, until the flavors meld together and the raw mangoes are completely cooked and soft.
  9. Remove from heat and let the Kacche Aam Ki Launji cool down to room temperature.
  10. Transfer the chutney to a clean, airtight jar and store it in the refrigerator.

Serve the Kacche Aam Ki Launji as a condiment or side dish with meals. It pairs well with Indian breads like paratha or puri, as well as with rice dishes. Enjoy the tangy and sweet flavors of this delightful raw mango chutney!
