Most Delicious Homemade Aloo Puri Recipe
Aloo puri is a popular North Indian breakfast dish made with deep-fried bread (puri) and a spicy potato (aloo) curry. Here is a simple recipe:
Ingredients:
For the puri:
- 2 cups whole wheat flour
- 1/2 tsp salt
- 1 tbsp oil
- Water as needed
- Oil for deep frying
For the aloo curry:
- 4 medium-sized potatoes, boiled and peeled
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp grated ginger
- 2 green chilies, chopped
- 1/2 tsp cumin seeds
- 1/2 tsp coriander seeds
- 1/4 tsp turmeric powder
- 1/2 tsp garam masala
- 1/2 tsp red chili powder
- 2 tbsp oil
- Salt to taste
- Chopped fresh coriander for garnish
Instructions:
- To make the puri, mix the whole wheat flour, salt, and oil in a mixing bowl. Gradually add water and knead the dough until it is smooth and pliable.
- Cover the dough and let it rest for 15-20 minutes.
- Divide the dough into small equal portions and roll them into small circles about 3-4 inches in diameter.
- Heat oil in a deep frying pan on medium-high heat. Once the oil is hot, gently drop the rolled out puri in the oil and fry until golden brown on both sides. Remove from the oil and place them on a paper towel to remove any excess oil.
- To make the aloo curry, heat oil in a pan on medium heat. Add cumin and coriander seeds and sauté for a few seconds until fragrant.
- Add the chopped onion, garlic, ginger, and green chilies and sauté until the onion is translucent.
- Add the boiled and mashed potatoes, turmeric powder, garam masala, red chili powder, and salt. Mix well and cook for 3-4 minutes.
- Add 1/2 cup of water to the pan and bring it to a boil. Reduce the heat and let the curry simmer for 5-7 minutes until the potatoes are cooked through and the curry has thickened.
- Garnish with fresh coriander and serve hot with the puri.
