Chocolate lava cake is a decadent dessert that features a rich, chocolatey cake with a gooey, melted center. Here is a simple recipe:

Ingredients:

  • 4 oz. semi-sweet chocolate, chopped
  • 1/2 cup unsalted butter, cut into small pieces
  • 2 eggs
  • 2 egg yolks
  • 1/4 cup granulated sugar
  • 2 tbsp all-purpose flour
  • Pinch of salt
  • Powdered sugar and fresh berries for garnish (optional)

Instructions:

  1. Preheat the oven to 425°F. Grease and flour 4-6 ramekins and set aside.
  2. In a small bowl, melt the chopped chocolate and butter together in the microwave or using a double boiler. Stir until smooth and set aside.
  3. In a separate mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and fluffy.
  4. Add the melted chocolate mixture to the egg mixture and stir until well combined.
  5. Sift in the all-purpose flour and salt and stir until just combined.
  6. Divide the batter evenly between the prepared ramekins.
  7. Bake the chocolate lava cakes for 12-14 minutes, or until the edges are set and the centers are still slightly jiggly.
  8. Carefully remove the ramekins from the oven and let them cool for 1-2 minutes.
  9. Using a small knife, loosen the edges of the cakes from the ramekins and invert each cake onto a serving plate.
  10. Dust the top of each cake with powdered sugar and garnish with fresh berries if desired.
