Ingredients:

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup honey
  • 1/4 cup freshly squeezed orange juice
  • 1 tsp orange zest
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Additional almond flour or shredded coconut for coating (optional)

Instructions:

  1. In a large mixing bowl, combine the rolled oats, almond flour, protein powder, and salt.
  2. In a separate bowl, whisk together the honey, orange juice, orange zest, and vanilla extract until well combined.
  3. Add the wet ingredients to the dry ingredients and stir until the mixture is well combined and forms a dough.
  4. Roll the dough into small balls, about 1 inch in diameter. If the dough is too sticky to handle, you can lightly coat your hands in additional almond flour or shredded coconut.
  5. Optional: Roll the balls in additional almond flour or shredded coconut for extra texture and flavor.
