Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 4 slices of Swiss cheese
- 4 slices of ham
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 2 tablespoons butter, melted
- Toothpicks
Instructions:
- Preheat your oven to 375°F (190°C).
- Place each chicken breast between two sheets of plastic wrap. Using a meat mallet or rolling pin, pound the chicken breasts to an even thickness of about 1/4 inch.
- Season the chicken breasts with salt and pepper on both sides.
- Lay a slice of Swiss cheese and a slice of ham on top of each chicken breast.
- Starting from one end, tightly roll up each chicken breast, securing it with toothpicks to hold the shape together.
- Place the flour, beaten eggs, and breadcrumbs in three separate shallow bowls.
- Dip each chicken roll into the flour, coating it evenly and shaking off any excess.
- Next, dip the floured chicken roll into the beaten eggs, allowing any excess to drip off.
- Finally, coat the chicken roll in the breadcrumbs, pressing them lightly onto the surface to ensure an even coating.
- Place the breaded chicken rolls on a baking sheet lined with parchment paper.
- Drizzle the melted butter over the chicken rolls to help them brown and become crispy.
- Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
- Remove the toothpicks from the chicken rolls before serving.
- Serve the Chicken Cordon Bleu warm. It pairs well with a side of steamed vegetables or a fresh salad.
