Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 4 slices of Swiss cheese
  • 4 slices of ham
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 2 tablespoons butter, melted
  • Toothpicks

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Place each chicken breast between two sheets of plastic wrap. Using a meat mallet or rolling pin, pound the chicken breasts to an even thickness of about 1/4 inch.
  3. Season the chicken breasts with salt and pepper on both sides.
  4. Lay a slice of Swiss cheese and a slice of ham on top of each chicken breast.
  5. Starting from one end, tightly roll up each chicken breast, securing it with toothpicks to hold the shape together.
  6. Place the flour, beaten eggs, and breadcrumbs in three separate shallow bowls.
  7. Dip each chicken roll into the flour, coating it evenly and shaking off any excess.
  8. Next, dip the floured chicken roll into the beaten eggs, allowing any excess to drip off.
  9. Finally, coat the chicken roll in the breadcrumbs, pressing them lightly onto the surface to ensure an even coating.
  10. Place the breaded chicken rolls on a baking sheet lined with parchment paper.
  11. Drizzle the melted butter over the chicken rolls to help them brown and become crispy.
  12. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
  13. Remove the toothpicks from the chicken rolls before serving.
  14. Serve the Chicken Cordon Bleu warm. It pairs well with a side of steamed vegetables or a fresh salad.
