A simple recipe for stuffed peppers:

Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound (450g) ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 cup shredded cheese (cheddar, mozzarella, or your preferred type)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions:

  1. Preheat your oven to 375°F (190°C). Prepare a baking dish by greasing it with olive oil.
  2. Cut the tops off the bell peppers and remove the seeds and membranes from the inside. Rinse the peppers and set them aside.
  3. In a large skillet, heat some olive oil over medium heat. Add the diced onion and minced garlic, and sauté until they become fragrant and translucent.
  4. Add the ground beef or turkey to the skillet and cook it until it is browned and cooked through. Break it up with a spoon or spatula as it cooks to crumble it into small pieces.
  5. Once the meat is cooked, drain any excess grease from the skillet.
  6. Add the cooked rice, drained diced tomatoes, dried oregano, dried basil, salt, and pepper to the skillet. Mix everything together until well combined. Cook for an additional 2-3 minutes to let the flavors meld.
  7. Place the bell peppers upright in the prepared baking dish. Spoon the meat and rice mixture into the peppers until they are filled.
  8. Sprinkle the shredded cheese over the top of each pepper, covering the filling.
  9. Bake the stuffed peppers in the preheated oven for about 25-30 minutes, or until the peppers are tender and the cheese is melted and lightly golden.
  10. Once cooked, remove the stuffed peppers from the oven and let them cool for a few minutes before serving.
