Meringue cookies are light and airy treats made from whipped egg whites and sugar. They have a crisp exterior and a soft, melt-in-your-mouth interior. Here's a simple recipe for meringue cookies:
Ingredients:
- 4 large egg whites, at room temperature
- 1 cup granulated sugar
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon vanilla extract
- Food coloring (optional)
- Sprinkles or other decorations (optional)
Instructions:
- Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper.
- In a clean, dry mixing bowl, add the egg whites and cream of tartar. Using an electric mixer, beat the egg whites on medium-high speed until soft peaks form.
- Gradually add the granulated sugar, about 1 tablespoon at a time, while continuing to beat the egg whites. Increase the mixer speed to high and beat until stiff peaks form. The mixture should be glossy and hold its shape.
- Gently fold in the vanilla extract. If desired, you can also add a few drops of food coloring at this stage to give the meringue cookies a colorful appearance.
- Transfer the meringue mixture into a piping bag fitted with a large round tip or simply use a spoon to drop dollops of the mixture onto the prepared baking sheet. Leave some space between the cookies as they will expand slightly.
- If desired, you can sprinkle some decorations, such as colorful sprinkles or edible glitter, on top of the meringue cookies.
- Place the baking sheet in the preheated oven and bake for about 1 ½ to 2 hours, or until the meringue cookies are dry to the touch and easily lift off the parchment paper. The baking time may vary, so keep an eye on them.
- Once the meringue cookies are done baking, turn off the oven and leave them inside with the oven door slightly ajar to cool completely. This helps to prevent cracking.
- Once completely cooled, gently remove the meringue cookies from the parchment paper. They should be crisp on the outside and soft and marshmallow-like on the inside.
- Store the meringue cookies in an airtight container at room temperature. They can last for several days.
