Creamy Strawberry Cakes
Creamy strawberry cake is a light and refreshing dessert that's perfect for spring and summer. Here's a recipe you can try:
Ingredients:
For the cake:
- 1 box of white cake mix
- 1/2 cup of pureed strawberries
- 1/2 cup of water
- 1/3 cup of vegetable oil
- 3 eggs
- Red food coloring (optional)
For the filling:
- 1 cup of heavy cream
- 1/2 cup of cream cheese, softened
- 1/2 cup of powdered sugar
- 1 teaspoon of vanilla extract
- 1 cup of pureed strawberries
For the frosting:
- 1/2 cup of unsalted butter, softened
- 4 cups of powdered sugar
- 1/2 cup of pureed strawberries
- 1-2 tablespoons of milk (if needed)
- Fresh strawberries for garnish
Instructions:
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, combine the white cake mix, pureed strawberries, water, vegetable oil, and eggs, and beat on medium speed until well combined.
- Add a few drops of red food coloring if you want a more vibrant pink color.
- Divide the batter evenly between the two cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool completely in the pans.
- To make the filling, beat the heavy cream in a large mixing bowl until stiff peaks form.
- In another mixing bowl, beat the cream cheese until creamy, then add in the powdered sugar and vanilla extract and beat until well combined.
- Add the pureed strawberries to the cream cheese mixture and beat until smooth.
- Gently fold the whipped cream into the strawberry mixture until well combined.
- To make the frosting, beat the softened butter in a large mixing bowl until creamy.
- Add in the powdered sugar, pureed strawberries, and milk (if needed), and beat until the frosting is light and fluffy.
- To assemble the cake, place one cake layer on a cake stand or plate.
- Spread a layer of the strawberry cream filling over the top of the cake layer.
- Place the second cake layer on top of the first, and spread another layer of the strawberry cream filling over the top.
- Frost the entire cake with the strawberry frosting, then garnish with fresh strawberries.
- Chill the cake in the refrigerator for at least 30 minutes before serving to allow the frosting to set.
This recipe yields one 2-layer 9-inch cake, and serves approximately 8-10 people. Enjoy!
