Creamy Strawberry Cakes

Creamy strawberry cake is a light and refreshing dessert that's perfect for spring and summer. Here's a recipe you can try:

Ingredients:

For the cake:

  • 1 box of white cake mix
  • 1/2 cup of pureed strawberries
  • 1/2 cup of water
  • 1/3 cup of vegetable oil
  • 3 eggs
  • Red food coloring (optional)

For the filling:

  • 1 cup of heavy cream
  • 1/2 cup of cream cheese, softened
  • 1/2 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1 cup of pureed strawberries

For the frosting:

  • 1/2 cup of unsalted butter, softened
  • 4 cups of powdered sugar
  • 1/2 cup of pureed strawberries
  • 1-2 tablespoons of milk (if needed)
  • Fresh strawberries for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, combine the white cake mix, pureed strawberries, water, vegetable oil, and eggs, and beat on medium speed until well combined.
  3. Add a few drops of red food coloring if you want a more vibrant pink color.
  4. Divide the batter evenly between the two cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  5. Allow the cakes to cool completely in the pans.
  6. To make the filling, beat the heavy cream in a large mixing bowl until stiff peaks form.
  7. In another mixing bowl, beat the cream cheese until creamy, then add in the powdered sugar and vanilla extract and beat until well combined.
  8. Add the pureed strawberries to the cream cheese mixture and beat until smooth.
  9. Gently fold the whipped cream into the strawberry mixture until well combined.
  10. To make the frosting, beat the softened butter in a large mixing bowl until creamy.
  11. Add in the powdered sugar, pureed strawberries, and milk (if needed), and beat until the frosting is light and fluffy.
  12. To assemble the cake, place one cake layer on a cake stand or plate.
  13. Spread a layer of the strawberry cream filling over the top of the cake layer.
  14. Place the second cake layer on top of the first, and spread another layer of the strawberry cream filling over the top.
  15. Frost the entire cake with the strawberry frosting, then garnish with fresh strawberries.
  16. Chill the cake in the refrigerator for at least 30 minutes before serving to allow the frosting to set.

This recipe yields one 2-layer 9-inch cake, and serves approximately 8-10 people. Enjoy!
