Ingredients:

  • 1 lb of boneless, skinless chicken breasts, diced
  • 1 tablespoon of olive oil
  • 1 tablespoon of taco seasoning
  • Salt and pepper to taste
  • 1 bag of tortilla chips
  • 2 cups of shredded cheddar cheese
  • 1/2 cup of diced tomatoes
  • 1/2 cup of diced red onions
  • 1/2 cup of diced jalapeños
  • Sour cream and guacamole for serving

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the diced chicken to the skillet and season with taco seasoning, salt, and pepper. Cook for 5-7 minutes, or until the chicken is cooked through.
  4. Arrange the tortilla chips in a single layer on the prepared baking sheet.
  5. Sprinkle half of the shredded cheddar cheese over the tortilla chips.
  6. Top the cheese with the cooked chicken, diced tomatoes, red onions, and jalapeños.
  7. Sprinkle the remaining shredded cheddar cheese over the top.
  8. Bake the nachos in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
