Ingredients:

  • 10 ounces of dark chocolate (60-70% cocoa solids), finely chopped
  • 4 egg yolks
  • 1/3 cup of granulated sugar
  • 1 1/4 cups of heavy cream
  • Pinch of salt

Instructions:

  1. Melt the dark chocolate in a heatproof bowl set over a pot of simmering water, stirring occasionally until smooth. Remove from the heat and set aside.
  2. In a separate bowl, whisk together the egg yolks and sugar until pale and thick.
  3. In a saucepan, heat the cream and salt over medium heat until it just begins to simmer.
  4. Slowly pour the hot cream into the egg yolk mixture, whisking constantly to combine.
  5. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
  6. Remove from the heat and stir in the melted chocolate until well combined.
  7. Pour the mixture through a fine-mesh sieve into a clean bowl to remove any lumps.
  8. Cover the surface of the cremeux with plastic wrap to prevent a skin from forming and chill in the refrigerator for at least 4 hours, or until set.
  9. Serve the dark chocolate cremeux chilled, either on its own or as a decadent topping for other desserts.
