Dark chocolate cremeux is a rich and decadent dessert that is similar to a chocolate ganache or pudding. It is made with high-quality dark chocolate, egg yolks, sugar, and cream, and has a smooth and velvety texture.
Here's a recipe you can try:
Ingredients:
- 10 ounces of dark chocolate (60-70% cocoa solids), finely chopped
- 4 egg yolks
- 1/3 cup of granulated sugar
- 1 1/4 cups of heavy cream
- Pinch of salt
Instructions:
- Melt the dark chocolate in a heatproof bowl set over a pot of simmering water, stirring occasionally until smooth. Remove from the heat and set aside.
- In a separate bowl, whisk together the egg yolks and sugar until pale and thick.
- In a saucepan, heat the cream and salt over medium heat until it just begins to simmer.
- Slowly pour the hot cream into the egg yolk mixture, whisking constantly to combine.
- Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
- Remove from the heat and stir in the melted chocolate until well combined.
- Pour the mixture through a fine-mesh sieve into a clean bowl to remove any lumps.
- Cover the surface of the cremeux with plastic wrap to prevent a skin from forming and chill in the refrigerator for at least 4 hours, or until set.
- Serve the dark chocolate cremeux chilled, either on its own or as a decadent topping for other desserts.
