Simple Roast Lamb

This recipe for Simple Roast Lamb is a classic and easy way to prepare a delicious and flavorful lamb roast. With just a few simple ingredients, you can create a mouth-watering main course that is sure to impress your guests.

Ingredients:

  • 1 (5-6 lb) leg of lamb, bone-in
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix together the minced garlic, chopped rosemary, olive oil, salt, and pepper.
  3. Place the lamb in a roasting pan with the fat side up.
  4. Use a sharp knife to make several deep incisions into the lamb, then rub the garlic and rosemary mixture all over the meat, making sure to get it into the incisions as well.
  5. Place the roasting pan in the preheated oven and roast for 15 minutes.
  6. After 15 minutes, reduce the heat to 350°F (175°C) and continue roasting for about 1 1/2 to 2 hours, or until the internal temperature of the lamb reaches 135°F (57°C) for medium-rare, or 145°F (63°C) for medium.
  7. Remove the lamb from the oven and let it rest for at least 10-15 minutes before slicing and serving.
