Ingredients:

  • 2 cloves of garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon garam masala (Indian spice blend)
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons chopped fresh coriander (cilantro)
  • 2 tablespoons cooking oil

Instructions:

  1. In a large mixing bowl, combine the chopped mixed vegetables, mashed potato, bread crumbs, onions, garlic, ginger, garam masala, cumin powder, coriander powder, red chili powder, salt, and fresh coriander. Mix everything together until well combined.
  2. Shape the mixture into small patties or kababs. You can make them round or oval-shaped according to your preference. Make sure the patties are compact and hold their shape well.
  3. Heat the cooking oil in a non-stick skillet or pan over medium heat.
  4. Place the veggie patties in the pan and cook them for about 4-5 minutes on each side, or until they turn golden brown and crispy. You can cook them in batches if needed, depending on the size of your pan.
  5. Once the patties are cooked, transfer them to a serving platter lined with paper towels to absorb any excess oil.
