Aloo Puri is a delicious Indian dish consisting of deep-fried bread (puri) served with a flavorful potato (aloo) curry. Here's a recipe to make homemade Aloo Puri:

Ingredients:

For the Puri:

  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • Water (as needed)
  • Oil (for deep frying)

For the Aloo Curry:

  • 3 medium-sized potatoes, boiled and mashed
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt (to taste)
  • 1/4 cup water
  • Fresh cilantro leaves, chopped (for garnish)

Instructions:

For the Puri:

  1. In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead into a firm dough. Let the dough rest for about 15-20 minutes.
  2. Divide the dough into small balls, approximately the size of a golf ball. Roll each ball into a small circular shape using a rolling pin.
  3. Heat oil in a deep pan or wok for deep frying. Once the oil is hot, carefully drop a puri into the oil and gently press it with a slotted spoon. This will help the puri puff up. Fry the puri until it turns golden brown and crispy. Remove it from the oil and drain on a paper towel. Repeat this process for the remaining dough.

For the Aloo Curry:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn translucent. Add green chilies, ginger paste, and garlic paste. Cook for another minute.
  3. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a minute to allow the spices to release their flavors.
  4. Add the mashed potatoes and mix thoroughly with the spice mixture. Cook for 2-3 minutes, stirring continuously.
  5. Add water to achieve the desired consistency for the curry. Simmer for a few minutes until the flavors are well combined. Adjust the salt and spices according to your taste.
  6. Remove from heat and garnish with freshly chopped cilantro leaves.
