Ingredients:

  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ¼ cups milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons ground cinnamon
  • ¼ cup brown sugar

For the cinnamon swirl:

  • ¼ cup unsalted butter, melted
  • ¼ cup brown sugar
  • 1 tablespoon ground cinnamon

Instructions:

  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Set aside.
  4. In a small bowl, mix together the ground cinnamon and brown sugar for the cinnamon swirl.
  5. Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or cooking spray.
  6. Pour ¼ cup of the pancake batter onto the skillet for each pancake.
