Step-by-step recipe for Grinder Pasta Salad:
Ingredients:
- 8 ounces (225 grams) fusilli or any pasta of your choice
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, diced (you can use a mix of colors)
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup fresh parsley, chopped
For the Dressing:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
Instructions:
- Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool it down.
- In a large bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, bell peppers, red onion, black olives, feta cheese, basil, and parsley. Toss gently to mix everything together.
- In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, honey, salt, and pepper until well combined.
- Pour the dressing over the pasta and vegetable mixture. Toss well to ensure that everything is coated evenly with the dressing.
