Ingredients:

  • 8 ounces (225 grams) fusilli or any pasta of your choice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced (you can use a mix of colors)
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley, chopped

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool it down.
