Veg Makhanwala Restaurant Style

Ingredients:

  • 1 cup mixed vegetables (such as carrots, peas, beans, cauliflower, etc.), chopped
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 2 tablespoons butter
  • 1 tablespoon oil
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 cup fresh cream
  • 1/4 cup cashew nut paste (soak cashews in water and blend to a smooth paste)
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

For the marinade:

  • 1/2 cup yogurt
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste

Instructions:

  1. In a bowl, combine the ingredients for the marinade - yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Mix well. Add the chopped vegetables to the marinade and let them marinate for about 30 minutes.
  2. Heat butter and oil in a pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
  3. Add the ginger-garlic paste to the pan and sauté for a minute until the raw smell disappears.
  4. Add the tomato puree to the pan and cook for 2-3 minutes until the oil separates from the mixture.
  5. Add the marinated vegetables (discard any excess marinade) to the pan and mix well. Cook for 5-6 minutes, stirring occasionally.
  6. In a small bowl, mix together the red chili powder, garam masala, turmeric powder, and cumin powder with a little water to form a paste. Add this paste to the pan and mix well.
  7. Reduce the heat to low, cover the pan, and let the vegetables cook for about 10-15 minutes or until they are tender.
  8. Add the cashew nut paste and fresh cream to the pan. Mix well and cook for an additional 2-3 minutes.
  9. Season with salt according to taste and mix well. If the gravy is too thick, you can add a little water to adjust the consistency.
  10. Garnish with chopped coriander leaves.
