Here's a recipe for Veg Makhanwala in restaurant style:
Ingredients:
- 1 cup mixed vegetables (such as carrots, peas, beans, cauliflower, etc.), chopped
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 2 tablespoons butter
- 1 tablespoon oil
- 1 teaspoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 cup fresh cream
- 1/4 cup cashew nut paste (soak cashews in water and blend to a smooth paste)
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
For the marinade:
- 1/2 cup yogurt
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
Instructions:
- In a bowl, combine the ingredients for the marinade - yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Mix well. Add the chopped vegetables to the marinade and let them marinate for about 30 minutes.
- Heat butter and oil in a pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste to the pan and sauté for a minute until the raw smell disappears.
- Add the tomato puree to the pan and cook for 2-3 minutes until the oil separates from the mixture.
- Add the marinated vegetables (discard any excess marinade) to the pan and mix well. Cook for 5-6 minutes, stirring occasionally.
- In a small bowl, mix together the red chili powder, garam masala, turmeric powder, and cumin powder with a little water to form a paste. Add this paste to the pan and mix well.
- Reduce the heat to low, cover the pan, and let the vegetables cook for about 10-15 minutes or until they are tender.
- Add the cashew nut paste and fresh cream to the pan. Mix well and cook for an additional 2-3 minutes.
- Season with salt according to taste and mix well. If the gravy is too thick, you can add a little water to adjust the consistency.
- Garnish with chopped coriander leaves.
