Onion focaccia is a flavorful and savory variation of the classic Italian bread. It incorporates caramelized onions into the dough and on top, resulting in a delicious and aromatic bread. Here's a recipe to make onion focaccia:

Ingredients:

  • 2 medium onions, thinly sliced
  • 3 tablespoons olive oil (divided)
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon instant yeast
  • 1 cup warm water
  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh rosemary leaves (optional)
  • Coarse sea salt for sprinkling

Instructions:

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook them slowly, stirring occasionally, until they become golden brown and caramelized. This process may take about 15-20 minutes. Set aside to cool.
  2. In a large mixing bowl, combine the flour, salt, and sugar. Mix well.
  3. Dissolve the yeast in warm water and let it sit for about 5 minutes until it becomes frothy.
  4. Add the yeast mixture and 1 tablespoon of olive oil to the dry ingredients. Mix with a spoon or your hands until the dough comes together.
  5. Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes until the dough becomes smooth and elastic.
  6. Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until it doubles in size.
  7. Preheat your oven to 425°F (220°C) and grease a baking sheet or line it with parchment paper.
  8. Punch down the risen dough to release any air bubbles. Transfer it to the prepared baking sheet and gently press it down to form a rectangular or round shape.
  9. Drizzle the remaining tablespoon of olive oil over the dough, spreading it evenly.
  10. Spread the caramelized onions over the dough, covering it completely.
  11. Optional: Sprinkle grated Parmesan cheese and fresh rosemary leaves over the onions for added flavor.
  12. Sprinkle coarse sea salt on top of the onion-covered dough.
  13. Bake the focaccia in the preheated oven for about 20-25 minutes, or until the bread turns golden brown and crispy.
  14. Once baked, remove the onion focaccia from the oven and let it cool slightly before serving.
