Ingredients:
- 1 pre-baked 9-inch pie crust
- 4 cups fresh strawberries, hulled and sliced
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1/2 cup water
- 1/2 teaspoon vanilla extract
- Whipped cream for serving (optional)
Instructions:
- Prepare and pre-bake a 9-inch pie crust according to the package instructions or your preferred recipe. Let it cool completely before using.
- Wash and hull the strawberries, removing the green tops. Slice them into halves or quarters, depending on their size. Set aside.
- In a medium saucepan, combine the sugar and cornstarch. Gradually whisk in the water until the mixture is smooth.
- Place the saucepan over medium heat and cook the sugar-cornstarch mixture, stirring constantly, until it thickens and becomes clear.
- Remove the saucepan from heat and stir in the vanilla extract. Let the mixture cool for a few minutes.
- Gently fold the sliced strawberries into the cooled sugar-cornstarch mixture until all the strawberries are coated.
