Lo Mein Noodles

Lo Mein noodles are a popular Chinese dish consisting of stir-fried noodles with vegetables, protein, and a flavorful sauce. Here's a recipe for vegetable Lo Mein noodles:
Ingredients:
- 8 ounces Lo Mein noodles or spaghetti noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 cup sliced mixed vegetables (such as carrots, bell peppers, broccoli, snap peas, cabbage)
- 1 cup sliced mushrooms
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Optional toppings: sliced green onions, sesame seeds
Instructions:
- Cook the Lo Mein noodles or spaghetti noodles according to the package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the minced garlic and grated ginger to the skillet and sauté for about a minute until fragrant.
- Add the sliced vegetables and mushrooms to the skillet. Stir-fry for a few minutes until the vegetables are crisp-tender.
- In a small bowl, whisk together the soy sauce, oyster sauce (if using), hoisin sauce, and sesame oil to make the sauce.
- Push the vegetables to one side of the skillet and pour the sauce into the empty side. Let it heat for a few seconds.
- Add the cooked noodles to the skillet, tossing everything together to coat the noodles with the sauce and vegetables.
- Stir-fry for a couple of minutes until the noodles are heated through and well combined with the vegetables and sauce.
- Taste the Lo Mein noodles and season with salt and pepper as desired. Adjust the sauce ingredients to suit your taste.
- Remove the skillet from the heat and transfer the Lo Mein noodles to serving plates or bowls.
- Garnish with sliced green onions and sesame seeds, if desired.
Vegetable Lo Mein noodles make for a satisfying and flavorful meal. You can also add cooked chicken, shrimp, beef, or tofu to the dish for added protein. Feel free to customize the vegetables based on your preference. Enjoy your homemade Lo Mein noodles!
