Sure! Here's a recipe for a classic Jelly Cake:

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk

For the Jelly Layer:

  • 2 packets (about 1/2 ounce each) unflavored gelatin
  • 2 cups fruit juice (such as orange juice or any other flavored juice)
  • Assorted fruits, diced (optional)

For the Whipped Cream Topping:

  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing just until combined.
  6. Pour the cake batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer the cake to a wire rack to cool completely.
  9. While the cake is cooling, prepare the jelly layer. In a small saucepan, sprinkle the gelatin over 1/4 cup of fruit juice and let it sit for a few minutes to bloom.
  10. Heat the remaining fruit juice in a saucepan over medium heat until hot but not boiling. Remove from heat and add the bloomed gelatin mixture. Stir until the gelatin is completely dissolved.
  11. Let the jelly mixture cool slightly, then pour it over the cooled cake. If desired, add diced fruits on top of the jelly layer.
  12. Refrigerate the cake for at least 2-3 hours, or until the jelly is set.
  13. Just before serving, prepare the whipped cream topping. In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  14. Spread the whipped cream over the jelly layer and decorate the cake as desired.
