Chili Garlic Pappardelle with Smashed Broccoli and Soft Eggs is a delicious and satisfying pasta dish that combines the flavors of spicy chili garlic, tender pappardelle pasta, roasted broccoli, and creamy soft-boiled eggs. Here's a recipe to guide you through the process:
Ingredients:
- 8 ounces pappardelle pasta
- 1 large head of broccoli, cut into florets
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon chili flakes (adjust according to your spice preference)
- Salt and pepper to taste
- 4 large eggs
- Grated Parmesan cheese (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook the pappardelle pasta according to the package instructions until al dente. Drain and set aside.
- Preheat your oven to 425°F (220°C).
- Place the broccoli florets on a baking sheet. Drizzle with 1 tablespoon of olive oil, minced garlic, chili flakes, salt, and pepper. Toss everything together to evenly coat the broccoli.
- Roast the broccoli in the preheated oven for about 15-20 minutes, or until it becomes tender and slightly charred. Remove from the oven and set aside.
- While the broccoli is roasting, bring a pot of water to a boil. Carefully add the eggs and cook for 6 minutes for soft-boiled eggs. Remove the eggs from the boiling water and transfer them to an ice bath to stop the cooking process. Once cooled, peel the eggs and set them aside.
- In a large skillet or pan, heat the remaining 1 tablespoon of olive oil over medium heat. Add the cooked pappardelle pasta and roasted broccoli to the skillet. Toss everything together to combine.
- Divide the pasta and broccoli mixture among serving plates. Place a soft-boiled egg on top of each serving.
- Garnish the dish with grated Parmesan cheese and chopped fresh parsley.
- Serve the chili garlic pappardelle with smashed broccoli and soft eggs immediately, while still warm.
