Ingredients:

  • 12 ounces (340 grams) firm tofu
  • 1 cup semisweet chocolate chips
  • 1/2 cup coconut oil (or any other vegetable oil)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: chopped nuts or additional chocolate chips for topping

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
  2. Drain the tofu and gently press it between paper towels or a clean kitchen towel to remove excess moisture. Crumble the tofu into small pieces.
  3. In a microwave-safe bowl, melt the chocolate chips and coconut oil together in the microwave, stirring every 30 seconds until smooth. Alternatively, you can melt them in a double boiler on the stove.
  4. In a mixing bowl, combine the melted chocolate mixture, crumbled tofu, granulated sugar, and vanilla extract. Stir until well combined and smooth.
  5. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix.
  7. Pour the brownie batter into the prepared baking pan and spread it evenly.
  8. If desired, sprinkle chopped nuts or additional chocolate chips on top of the batter.
  9. Bake in the preheated oven for approximately 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  10. Remove the brownies from the oven and allow them to cool completely in the pan before slicing and serving.
