Vegan Tofu Brownies

Vegan tofu brownies are a delightful twist on traditional brownies, replacing eggs and dairy with tofu for a moist and fudgy texture. Here's a recipe for making vegan tofu brownies:
Ingredients:
- 12 ounces (340 grams) firm tofu
- 1 cup semisweet chocolate chips
- 1/2 cup coconut oil (or any other vegetable oil)
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Optional: chopped nuts or additional chocolate chips for topping
Instructions:
- Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
- Drain the tofu and gently press it between paper towels or a clean kitchen towel to remove excess moisture. Crumble the tofu into small pieces.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil together in the microwave, stirring every 30 seconds until smooth. Alternatively, you can melt them in a double boiler on the stove.
- In a mixing bowl, combine the melted chocolate mixture, crumbled tofu, granulated sugar, and vanilla extract. Stir until well combined and smooth.
- In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix.
- Pour the brownie batter into the prepared baking pan and spread it evenly.
- If desired, sprinkle chopped nuts or additional chocolate chips on top of the batter.
- Bake in the preheated oven for approximately 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
- Remove the brownies from the oven and allow them to cool completely in the pan before slicing and serving.
