Ingredients:

  • 4 fish fillets (such as snapper, cod, or sea bass), skin-on
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken or vegetable broth
  • 2 tablespoons chopped fresh parsley (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Season the fish fillets with salt and pepper on both sides.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Place the fish fillets skin-side down in the skillet. Cook for about 4-5 minutes, or until the skin is crispy and golden. Flip the fillets and cook for an additional 2-3 minutes until the fish is cooked through. Remove the fish from the skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil and reduce the heat to medium. Add the chopped onion and garlic, and sauté until they become translucent and fragrant, about 3-4 minutes.
  4. Add the cannellini beans, diced tomatoes (with their juice), dried oregano, dried thyme, paprika, and red pepper flakes (if using) to the skillet. Stir well to combine the ingredients. Pour in the chicken or vegetable broth and bring the mixture to a simmer. Allow it to cook for about 10-15 minutes, stirring occasionally, until the ragu thickens slightly.
  5. Taste the ragu and adjust the seasoning with salt and pepper if needed.
  6. Place the crispy skin fish fillets on top of the bean ragu in the skillet. Cover the skillet with a lid and let it cook for an additional 2-3 minutes, allowing the flavors to meld together.
  7. Remove from heat and sprinkle with fresh parsley for garnish.
