Kutchi Dabeli

Kutchi Dabeli is a popular street food snack from the Kutch region of Gujarat, India. It is a flavorful and spicy potato filling sandwiched between a pav (bun) and topped with various chutneys, sev (crispy chickpea flour noodles), and garnishes.

Ingredients: For the Potato Filling:

  • 4 medium-sized potatoes, boiled and mashed
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 2 tablespoons roasted peanuts, coarsely crushed
  • 2 tablespoons pomegranate seeds (optional)
  • 2 tablespoons chopped coriander leaves
  • 1 tablespoon tamarind-date chutney
  • 1 tablespoon red chili-garlic chutney (or as per spice preference)
  • 1/2 teaspoon chaat masala
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • Salt to taste
  • Oil for cooking

For Assembling:

  • 8 pav (buns)
  • Tamarind-date chutney
  • Red chili-garlic chutney
  • Garlic chutney (optional)
  • Nylon sev (crispy chickpea flour noodles)
  • Finely chopped onions
  • Fresh coriander leaves
  • Grated coconut (optional)
  • Ghee or butter for toasting the pav

Instructions: For the Potato Filling:

  1. Heat oil in a pan on medium heat.
  2. Add chopped onions and sauté until they turn translucent.
  3. Add chopped tomatoes and cook until they become soft.
  4. Add mashed potatoes, roasted peanuts, pomegranate seeds (if using), tamarind-date chutney, red chili-garlic chutney, chaat masala, cumin powder, coriander powder, and salt. Mix well to combine all the ingredients.
  5. Cook the potato filling for a few minutes, stirring occasionally, until the flavors are well incorporated. Remove from heat.
  6. Garnish with chopped coriander leaves and set the potato filling aside.

For Assembling:

  1. Slit the pav (buns) horizontally, but not all the way through.
  2. Apply tamarind-date chutney on one side of the bun and red chili-garlic chutney on the other side. Optionally, you can also apply garlic chutney for extra flavor.
  3. Place a spoonful of the potato filling inside the bun.
  4. Top it with nylon sev, finely chopped onions, fresh coriander leaves, and grated coconut (if using).
  5. Close the bun and press it lightly to secure the filling.
  6. Repeat the process for the remaining buns.

To Serve:

  1. Heat a tawa or griddle on medium heat.
  2. Spread some ghee or butter on the tawa.
  3. Place the prepared Dabeli on the tawa and toast them on both sides until they turn crisp and golden brown.
  4. Remove from the tawa and serve hot.
