Ingredients:
- 4 cups water
- 2 cups chicken or vegetable broth
- 4 tablespoons miso paste (white or red, whichever you prefer)
- 8 ounces pork tenderloin, thinly sliced
- 2 baby bok choy, leaves separated and trimmed
- 4 green onions, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- Optional toppings: sliced green onions, toasted sesame seeds, chili oil
Instructions:
- In a large pot, bring the water and broth to a simmer over medium heat.
- In a small bowl, whisk together the miso paste with a little bit of the simmering broth until the paste is dissolved. This will help prevent lumps in the soup.
- Add the dissolved miso paste to the pot and stir to combine.
- Add the thinly sliced pork to the pot and simmer for about 5 minutes, or until the pork is cooked through and tender.
- Add the baby bok choy leaves, sliced green onions, minced garlic, grated ginger, soy sauce, and sesame oil to the pot. Stir to combine.
