Garlic Butter Chicken and Rice

Ingredients

  • 1 1/2 chicken tenderloin
  • 1 cup bell peppers mix
  • 1 cup onion
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon complete seasoning
  • 1 teaspoon chicken bouillon
  • 2 bay leaves

  • 2 cups chicken broth
  • 4 tablespoon unsalted butter.
  • 2 tbsps minced garlic

  • White sauce
  • 3 tbsps sour cream
  • 3 tbsps mayo
  • Fresh parsley
  • 1/2 lemon juice

To cook Garlic Butter Chicken and Rice, follow these steps:

  1. Prepare the chicken tenderloin by seasoning it with paprika, garlic powder, Italian seasoning, complete seasoning, and chicken bouillon. Set it aside to marinate for about 15-20 minutes.
  2. In a large skillet or pan, melt 2 tablespoons of butter over medium heat. Add minced garlic and cook until fragrant, for about 1-2 minutes.
  3. Add the seasoned chicken tenderloin to the skillet and cook until browned on all sides. This should take approximately 3-4 minutes per side. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, melt 4 tablespoons of unsalted butter. Add the bell peppers and onions, and sauté until they become tender and slightly caramelized.
  5. Add the Jasmine rice to the skillet and stir it with the vegetables, ensuring that the rice is coated in the butter. Toast the rice for a minute or two until it becomes slightly translucent.
  6. Pour in the chicken broth and add the bay leaves. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and let the rice simmer for about 15-20 minutes, or until the rice is cooked and has absorbed all the liquid.
  7. While the rice is cooking, prepare the white sauce. In a small bowl, mix together sour cream, mayo, and the juice of half a lemon. Stir until well combined. Set the sauce aside.
  8. Once the rice is cooked, return the cooked chicken tenderloin to the skillet. Mix it with the rice and vegetables, ensuring everything is evenly distributed. Cook for an additional 2-3 minutes to heat the chicken through.
  9. Remove the skillet from the heat. Garnish the dish with fresh parsley.
  10. Serve the Garlic Butter Chicken and Rice hot, with a dollop of the prepared white sauce on top of each serving.
