Garlic Butter Chicken and Rice

Ingredients
- 1 1/2 chicken tenderloin
- 1 cup bell peppers mix
- 1 cup onion
- 1 tsp paprika
- 1 tsp garlic powder
- 1 teaspoon Italian seasoning
- 1 teaspoon complete seasoning
- 1 teaspoon chicken bouillon
- 2 bay leaves

- 2 cups chicken broth
- 4 tablespoon unsalted butter.
- 2 tbsps minced garlic
- 4 tbsps unsalted butter
- White sauce
- 3 tbsps sour cream
- 3 tbsps mayo
- Fresh parsley
- 1/2 lemon juice
To cook Garlic Butter Chicken and Rice, follow these steps:
- Prepare the chicken tenderloin by seasoning it with paprika, garlic powder, Italian seasoning, complete seasoning, and chicken bouillon. Set it aside to marinate for about 15-20 minutes.
- In a large skillet or pan, melt 2 tablespoons of butter over medium heat. Add minced garlic and cook until fragrant, for about 1-2 minutes.
- Add the seasoned chicken tenderloin to the skillet and cook until browned on all sides. This should take approximately 3-4 minutes per side. Remove the chicken from the skillet and set it aside.
- In the same skillet, melt 4 tablespoons of unsalted butter. Add the bell peppers and onions, and sauté until they become tender and slightly caramelized.
- Add the Jasmine rice to the skillet and stir it with the vegetables, ensuring that the rice is coated in the butter. Toast the rice for a minute or two until it becomes slightly translucent.
- Pour in the chicken broth and add the bay leaves. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and let the rice simmer for about 15-20 minutes, or until the rice is cooked and has absorbed all the liquid.
- While the rice is cooking, prepare the white sauce. In a small bowl, mix together sour cream, mayo, and the juice of half a lemon. Stir until well combined. Set the sauce aside.
- Once the rice is cooked, return the cooked chicken tenderloin to the skillet. Mix it with the rice and vegetables, ensuring everything is evenly distributed. Cook for an additional 2-3 minutes to heat the chicken through.
- Remove the skillet from the heat. Garnish the dish with fresh parsley.
- Serve the Garlic Butter Chicken and Rice hot, with a dollop of the prepared white sauce on top of each serving.
